Happy Hump Day everyone! I don’t know about you, but I am so happy that all of this election stuff is over now!! Time to stop stressing & just go on with life again.
Today I wanted to share the recipe for one of my favorite snacks as of late – spinach dip. It’s so quick and easy to make, and tastes delicious. You can eat it with crackers, pretzels, sourdough or pumpernickel bread, fresh cut veggies, etc.
Here’s all you need!
1 cup mayo (any brand will do)
16 oz. of sour cream
10 oz. package of frozen chopped spinach, thawed
1 can of water chestnuts, diced
1 packet of dry leek soup mix
Scoop the mayo and sour cream into a medium sized bowl
Stir in the entire packet of dry leek soup mix and set aside
Dice up the water chestnuts
Stir in water chestnuts & thawed spinach and voila!
You can technically dig in right away, but the original recipe recommends chilling the dip in the fridge for a few hours to soften the soup mix and blend all the flavors. I love mixing up this dip for parties, family get-togethers, or just simply for a snack. It makes a pretty large amount and lasts in the fridge for awhile. One of my favorite recipes!
