My 3 Favorite Healthy Breakfasts

Happy Sunday! Hope you’ve all been enjoying your weekend. It’s actually starting to feel like spring here in Wisconsin, at least for the moment. So funny, but I feel like when it’s in the forties most other places, people are all geared up in winter coats and gloves, whereas here in Wisconsin we’re all driving with the windows down and breaking out the t shirts.

This past week I’ve really been trying to start eating more mindfully and have loved starting off the day with a fresh, filling breakfast. Today, I wanted to share with you guys 3 of my favorite healthy breakfasts of late that are not only yummy, but quick and easy to make.

First up is a fruit & yogurt parfait. I make these differently almost every time. I love to use non-fat greek yogurt, and top it with whatever fruit I have on hand. Strawberries, bananas, blueberries. Sometimes just one, and sometimes all 3! I’ll also sprinkle on some fiber one cereal or chia seeds if I feel like it. This is not only super filling, but super delicious and easy to make!

Second is this egg, avocado & salsa breakfast sandwich. I’ve made this using an english muffin, tortilla, bagel thin or sandwich thin. Also, if you’re trying to cut out carbs you can also leave of the bread entirely and eat it just as a scramble. I know the combo sounds a little weird, but trust me when I tell you that it is super delicious. If you eat it as a sandwich, it can be really messy so just make sure you have a plate and some napkins.  This is another super easy breakfast! All you need to do is scramble up and egg or two, slice up some avocado and spoon on the salsa. Takes all of five minutes.

Last but not least, perhaps the simplest and easiest of all 3, this almond butter & banana toast. I don’t know what it is, but I swear these two are a match made in heaven. This breakfast keeps me satisfied until lunch and is so simple and quick to make. I usually sandwich the two slices together and eat that way, but you can eat each slice separately also if you wish.

Each of these 3 breakfasts are under 350 calories, but I swear it feels like you’re eating a lot of food! They all keep me full and kick off my day on a healthy start.
